Chocolate Dipping Ganache


Endless uses.

 

In a medium saucepan

1 cup (227g) heavy cream

1 tablespoon corn syrup

Splash of espresso

Splash of vanilla extract

Pinch of salt



In a medium bowl

2 cups (170g) good chocolate, chopped

In a medium saucepan, bring the cream, corn syrup, and flavorings to a gentle simmer.

Pour the cream mixture over the chopped chocolate and let sit for a few minutes then whisk for a few minutes until the ganache is thick and creamy and all the chocolate bits are smooth.

Serve immediately. If the mixture gets too thick or starts to solidify, reheat over low heat or in ten second increments in the microwave.
